Sherab Jayang, 44, runs Amdos Kitchen in Ahmedabad, India. Born in Tibet, he moved to Mysore to become a monk but left due to the tough lifestyle. Having grown up watching his parents cook, he opened a restaurant in Manali after leaving the monastery. Later, he took over his friend’s shop in Ahmedabad. Though he sometimes regrets leaving, believing life was better in the monastery, he accepts it as fate. A calm, friendly, and quick multitasker, he excels at making momos while managing his restaurant and helpers with ease.
